Pumpkin Pie Granola

Fall is here! My favorite time of year. Everything pumpkin, the promise of holidays around the corner, and pulling out cozy clothes that you haven't seen since last year. This granola recipe seems to fit the bill perfectly.


6 cups oats
2 cups nuts and/or seeds
2 cups dried fruit (your choice. I love cranberries and apples!)
1/2 cup ground flax seeds
1/2 cup your choice honey or agave nector
1 cup canned pumpkin (but can substitute cooked sweet potatoes)
2 tbsp olive oil
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves

Preheat oven to 300 degrees. Mix all ingredients well and spread on sprayed cookie sheets. Bake for 60 minutes, stirring often. Enjoy with almond milk, greek yogurt, or alone! Leave me a comment below with how you love to enjoy granola!
